Era pasta fresca, quella vera, che andava mangiata subito oppure congelata. Oggi Zini porta avanti questa tradizione, rispettando le ricette di una volta e rifiutando di usare ingredienti non naturali come coloranti e additivi. Per la conservazione dei suoi prodotti ricorre ad un solo elemento naturale: il freddo. Oggi come allora, dopo 60 anni, nel nuovissimo pastificio di Milano tutti i prodotti appena fatti vengono cotti e surgelati in tempi rapidissimi.
