The first production of Kosher Parmigiano Reggiano is already sold-out

Nicola Bertinelli, CEO of the family-owned dairy farm that produced the first Kosher Parmigiano Reggiano, said: “We are very satisfied with the result obtained at the end of a particularly challenging process through all the production phases which involved breeders, dairy farms and master cheesemakers. The fact of starting off with cattle fed according to the wholly natural principles established in the rules for kosher Parmigiano Reggiano was the first fundamental element of compliance with the Kashrut, although the rules on breeding and milking, just like the ones on the installations and facilities, entailed considerable adjustments under the constant supervision of a rabbi.”
The Bertinelli Dairy Farm’s yearly production capacity is of 5,000 wheels of kosher Parmigiano Reggiano: the first year’s production is already all sold-out, testifying to the interest raised by this brand-new product.
